Cauliflower Pizza Crust

Before riced cauliflower became a grocery store staple, I made cauliflower pizza crust from scratch… once. And vowed to never do it again.⁠

Fortunately, riced cauliflower is now a common, affordable find in the frozen veggie aisle. I buy at least two bags a week.

And here I am, back at it, makin’ cauliflower pizza crusts that are easy and delicious.

 

Sure, you can buy them from the store, but they’re expensive, small, filled with corn products, and just… not very good.

Well this one’s a goodie. It’s sturdy and packed with nutrients and flavor.⁠

 

Cauliflower Pizza Crust

2 - 12 oz packages of frozen riced cauliflower⁠

3 eggs, whisked⁠

1 tablespoon dijon mustard⁠

1 teaspoon dried oregano⁠

1 teaspoon sea salt⁠

1 teaspoon garlic powder⁠

Black pepper to taste⁠

3/4 cup almond flour⁠

Directions:

1. Empty the two bags of frozen cauliflower into a microwave-safe bowl. Microwave on high for four minutes. Give it a stir, and microwave for another four minutes.⁠

2. Dump thawed cauliflower onto the middle of a dish towel, and squeeze out excess water over a sink or bowl.⁠

3. Place the squeezed cauliflower, whisked eggs, dijon mustard, oregano, salt, garlic powder and black pepper into a large bowl, and stir to evenly combine.⁠

4. Add almond flour to the bowl, and stir to evenly combined.⁠

5. Place “dough” onto a parchment-lined baking sheet, and spread it out with your fingers until it’s about 1/4” thick. Lightly slapping the dough works to prevent sticking to your fingers.⁠

6. Bake at 400F for about 20 minutes, or until it’s slightly golden along the edges and dry on top.⁠

7. Remove from oven. Place sheet of parchment over the top, and carefully flip it over so the crust is flipped and new parchment is on the bottom. ⁠

8. Bake for another 10-15 minutes, or until dry and golden brown to your liking. ⁠⠀

9. Top with your favorite toppings, and bake for another 5-10 minutes. Or let the crust completely cool, wrap in parchment paper and aluminum foil, and freeze for up to three months. From the freezer, add toppings, and bake at 400F until sauce or cheese bubbles.⁠⠀ ⁠⠀
