DIY Peppermint Mocha

It's that time of year... where I'm putting peppermint in all the things, including my coffee.
 
I used to be a big fan of ordering peppermint mochas on Fridays this time of year. Although I'd tweak the standard version to minimize the nosedive into my desk 2pm, it was still packed with a little more sugar than I'd like in coffee form.
 
I prefer my sugar in the form of fruit, chocolate or cookies, you know? 
 
So last year I whipped up a DIY version that I also like to call the LAZY peppermint mocha.
 
 
Sure, you can add fancier things, like homemade coconut whipped cream or make your own peppermint syrup, but I don't have the time or patience for that kind of activity before 8am on a weekday.
 
Here's how to do it...
 
Ingredients:
8 oz brewed coffee
A few drops of peppermint oil or 1/8 tsp peppermint extract
1 Tbsp unsweetened cocoa or raw cacao powder
A splash of your preferred milk
1 tsp maple syrup or a few drops of stevia (or sweetened to your taste)
Scoop of collagen (for bonus points)
 
Instructions:
Pour all ingredients into a blender and blend until combined and a little frothy. Pour into a mug, and enjoy!
