Peppermint Chocolate Avocado Pudding

If you’re limiting your avocado intake to guac and salads, you’re missing out, friend.
 
They’re a creamy, nutritious addition to smoothies and desserts. And I promise, you can’t taste it when there are other strong flavors in the mix.⁠
 
A favorite is avocado pudding, especially if I need a mid-afternoon pick-me-up. It’s simple, quick, and a blood-sugar balancer to get me through to dinner.⁠
 
I've been a fan of this chocolate avocado pudding recipe for a while now, but last year I felt a little daring and added a few drops of peppermint to my usual lineup, and BOOM... it was the perfect festive upgrade.
 
So this year I made it official with a recipe. 
 
Peppermint Chocolate Avocado Pudding⁠
 
Ingredients
1 ripe avocado⁠
2 Tbsp cacao powder or high quality unsweetened cocoa powder⁠
1-2 Tbsp maple syrup⁠ (to taste)
1 tsp vanilla extract⁠
1/4 tsp peppermint extract or a few drops of peppermint oil
Pinch of salt⁠
Optional add-ins: 1 Tbsp water or milk, or more if needed to blend⁠. 1 scoop collagen powder.
 
Instructions
1. Slice the avocado into chunks and scoop out into a blender or mini food processor. Add in remaining ingredients, and blend until smooth. ⁠Add a tbsp of water or milk if you're having trouble getting it to blend.
 
2. Give it a taste test, and add a touch more syrup, if necessary. Blend again until combined.⁠
 
Serve right away, or store in an airtight container in the fridge for up to two days. Stir before serving if it has separated.⁠
 
Tips:
  • Toppings add a tasty texture. I like crushed candy canes, coconut flakes or cocoa nibs.⁠
  • Adding 3-4 frozen cherries or 1/4 ripe banana are other ways to add a nutritional flavor boost (instead of more syrup) if you’re feeling threatened by the avocado flavor.
