This time, it's a small twist to a favorite... PUMPKIN Energy Balls. A balanced snack that puts a fall pep in your step. 🎃⠀ ⠀
Pumpkin Energy Balls
1 cup old-fashioned oats
2/3 cup unsweetened shredded coconut (add extra 1/2 cups oats if you don't like coconut)
1/2 cup creamy peanut butter (or any nut butter)
1/2 cup pumpkin puree
1/2 cup ground flaxseed
1/4 cup chopped dark chocolate chips
1/4 cup honey or maple syrup
1 tablespoon chia seeds
1 tablespoon vanilla extract
1/2 teaspoon cinnamon
1 tablespoon pumpkin spice
Directions:
1. Stir everything together in a large bowl until combined.
2. Roll into 1-inch balls. I like to use a mini ice cream scoop. If they’re not sticking together, add a little more nut butter or pop in the fridge for 30 minutes to firm up before rolling.
3. Store in a sealed container in the fridge for a week or up to 3 months in the freezer.
